Whole Dried Chili: Define Broken-Pod and Stem Limits Before Buying

Whole Dried Chili: Define Broken-Pod and Stem Limits Before Buying

Why “Whole” Is Not a Complete Specification

When sourcing whole dried chili, the product name alone does not tell a receiving team how much broken material or stem content to accept. A supplier and a processor can use the same description while expecting different physical grades.

For sauce manufacturers, seasoning producers, and spice importers, a clearer specification starts with definitions. Agree what counts as an intact pod, how damaged or broken pods are classified, and how stems attached to pods differ from loose stem material.

Agree the Basis Before Setting a Percentage

A percentage needs a measurement basis. A result measured by weight is not interchangeable with one measured by count. Both parties should also agree the sample size, selection procedure, and acceptance decision before the order is confirmed.

| Item | What the purchasing specification should state |

| --- | --- |

| Broken pods | Definition, permitted proportion, and weight or count basis |

| Stem material | Attached versus loose stems, limits, and assessment method |

| Sampling | How the lot is represented and how acceptance is decided |

The close-up images show pods spread out and lifted by hand. They help illustrate physical features, but a handful selected for a camera is not evidence of the proportion present across a lot.

Keep Physical Grade Separate from Laboratory Parameters

Broken-pod and stem limits do not establish ASTA color value, Scoville Heat Units (SHU), or moisture content. Specify those requirements separately with agreed methods and relevant batch evidence. ASTA 20.1 can be used as an agreed method for extractable color; it is not a physical grading standard.

 Buyer FAQ

Can a product video replace representative sampling?

No. Use it for an initial visual review, then assess representative material against the agreed specification.

Should every processor use the same breakage limit?

No. Set the limit around the intended process and finished product, and confirm it with the supplier before purchase.
