How to Choose a Chili Powder Supplier for Food Manufacturing

How to Choose a Chili Powder Supplier for Food Manufacturing

To choose a chili powder supplier for food manufacturing, write down a full specification first (ASTA color, SHU heat range, mesh size, moisture, seed content and grade), then ask each supplier for test reports against that specification and a sample you can run in your own recipe. Compare suppliers on how closely they confirm your numbers in writing, not on general claims.

This guide is for buyers at seasoning plants, sauce makers, importers and private-label brands. It covers what to specify, what to ask for, and how ordering works with us at ChangFengAgro in Jiaozhou, Shandong.

1. Specify the product before you contact suppliers

Most problems with bulk chili powder start with a loose specification. "Red chili powder, medium hot" can be met by very different products. Put these points in your inquiry:

  • ASTA color value. ASTA measures extractable red color. It decides how red your finished seasoning, sauce or snack coating looks. State a target and an acceptable tolerance.
  • Heat (SHU range). Scoville heat units describe pungency. Give a range rather than a single number, because heat varies between pepper lots. If your contract depends on it, ask for the test method to be named (for example HPLC).
  • Mesh or particle size. A fine powder disperses evenly in dry seasonings and sauces; a coarser grind gives visible specks and texture. Say which mesh you need and whether you need a particle size report.
  • Moisture. Low moisture helps flowability and storage. Set a maximum.
  • With or without seeds. Seeds change color, heat and appearance. Say whether seeds are allowed and, if so, how much.
  • Grade. Suppliers use grade names differently, so always tie a grade name to the numbers above.

As a reference point, our Chilli Powder Grades 2, 3 and 4 page lists grade 2 at 140 ASTA, 70 mesh, 2,000–40,000 SHU or customized, and 10% max moisture. For grades 3 and 4, and for any other parameter: made to your requirement; confirmed in your quotation. You can see the rest of our range on the chilli powder category page.

2. Quality and safety checks to ask for

Ask every supplier the same questions so the answers are comparable. Useful requests include:

  • Moisture result for the lot you will receive, not only a typical value.
  • Mycotoxin testing: aflatoxins (B1 and total) and ochratoxin A, with the limits stated against the rules of your import market.
  • Sudan dye testing: ask for a report showing the powder was tested for Sudan I–IV and similar illegal dyes, and that it contains no added colorants.
  • Microbiology: for example Salmonella, total plate count, yeast and mould, and E. coli, with the methods used.
  • Pesticide residues if your market or customer requires them.
  • Who did the testing: the supplier's own lab or a third-party lab, and whether pre-shipment testing by a lab you choose is accepted.

Agree the limits and methods in the contract. Then the shipment can be checked against something concrete. Our FAQ page explains how we handle ASTA, SHU and testing questions.

3. Test samples in your own process

A specification sheet does not show how a powder behaves in your recipe. Run the sample through your normal mixing, cooking or coating step and compare color, heat, flavor and flow against your current material. Keep part of the approved sample as a reference for checking bulk deliveries.

We offer a free 200 g sample of all products, with freight paid by the buyer. Tell us the heat level you are considering so the sample matches your target.

4. Check MOQ and lead time

Ask for minimum order quantity and lead time in writing, and ask when the lead time starts. Our terms are:

  • MOQ: 5 t for chili powder and other processed products; 1 container for dried chilli such as whole dried chilli.
  • Lead time: about 1 week after order confirmation.

If you need a fixed arrival date, give it with your inquiry so the shipping date can be planned in the quotation.

5. Packaging and container loading

Packaging affects shelf life and how easily the powder is handled in your plant. Ask about bag type, inner liner, net weight per bag, labeling and palletizing. We pack chili powder in kraft paper bags with a PP liner; bag size and labeling are made to your requirement and confirmed in your quotation.

Loading affects how you plan each shipment. Chili powder loads about 25 t per container. Whole dried chilli loads about 12 t uncompressed or 22–25 t compressed. If you also buy chili flakes or kimchi chilli powder, ask whether products can share a container; this is confirmed in your quotation.
